Grilled Chicken with Lemon,Herb Garlic Butter on Mesclune Baby Spinach Greens






Chick Pea Fritters (Revithokeftedes)

INGREDIENTS

·       1 cup chick peas
·       ¼ cup onions, chopped
·       Salt,
·       Pepper
·       Parsley,
·       Dill,
·       Oregano
·       1 smashed tomato
·       Dry breadcrumb
·       Flour for binding the mixture and for coating
·       Some crumbled feta cheese or any grated cheese (optional)
·       1 egg
·       Veggie Oil for frying

METHOD
Drain chick peas and mash with a mixer. Place in a bowl and add chopped onion, mashed tomato, breadcrumb, finely chopped parsley, dill, oregano, salt and pepper. Add cheese, beaten eggs and a little flour to bind. Mix well, form into small balls and coat in flour. Fry in hot oil until golden brown.
Serve with Tzatziki   Sauce


Lemon Garlic Herb Butter
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon grated lemon zest
  • 2 teaspoons finely chopped parsley
  • 2 teaspoons finely chopped thyme
  • 1 small clove garlic, finely chopped
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • Procedure:
  • Combine all ingredients in a small bowl with black pepper to taste. Beat lightly with a fork. Let stand at room temperature for 15 minutes and up to 2 hours to let the flavors meld. Chill in refrigerator until firm. Butter can be covered tightly and refrigerated for up to a week. Slice pats of chilled butter and serve over dishes as desired.
  • Chicken Breast Marinade
  •  5 oz chix breasts washed and trimmed
  • TT Extra Virgin Olive Oil
  • TT Red wine Vinegar
  • TT Juice of 1 lemon
  • TT Salt & Pepper
  • Mix and let marinade over night in refrigerator, grill prior to serving on salad
  • Place Sliced grilled chicken on top of greens and heat herb butter and pour onto chicken, finish with fresh parsley and Lemon Juice!!!

Spinach and Feta Fritters




Ingredients



¼ cup chopped spinach
TT herbs (I used a mixture of parsley, dill )
¼  cup green onions (sliced)
1/4 cup feta (crumbled)
1 egg
salt and pepper to taste
1 / 2 cup flour (whole wheat flour is also good)
TT milk
TT baking powder
2 tablespoons oil

Directions:
1. Mix the spinach, herbs, onions, feta, egg, salt, baking powder and pepper in a bowl.  
2. Mix in the flour. (Note: You want to mix in enough flour that the mixture will hold its form when fried.)
Milk as needed for proper consistency 
3. Heat the oil in a pan.
4. Spoon the spinach mixture into the pan and cook until golden brown on both sides, about 2-4 minutes per side.

5. Serve with side of  Tzatziki   or Greek Yogurt

Chicken Scallop Paella



TT chicken stock
TT extra-virgin olive oil
TT onion, chopped
garlic clove  finely chopped
TT red & Green diced peppers
TT  saffron
TT  white rice
TT diced tomatoes
TT tomato paste
3 chix fingers cubed
4 sea scallops
Salt and pepper 
TT Butter
TT parsley


Directions
Dredge Chix I scallops in flour, Sear chicken and scallops
Add garlic and peppers & onion, saute’ well, add saffron  tomatoes, touch of tomato paste
Add butter, then  rice and mix well, cover with chix stock till rice is cooked!

Turkey Feta Burgers

Turkey Feta Burgers


 5 oz ground turkey
TT crumbled feta cheese
 TT kalamata olives, pitted and sliced
TTBaby spinach
 2 teaspoons dried oregano
 ground black pepper to taste
TT flavored bread crumbs
1 egg
1 ciabatta roll
Directions

Preheat the grill for medium high heat.
In a large bowl, combine turkey, feta cheese, olives, oregano, and pepper. add egg mix in bread crumbs-Mix together, and form into patties.

Lightly oil the grate. Place patties on the grill. Cook for 10 to 12 minutes, turning halfway through.  Finish in the oven, garnish with baby spinach serve with Lemon Greek Fries!! :-D

Chopped Beef Gyro with Tzatziki sauce

5 oz ground lean beef  S&P oregano parsley
1 cloves crushed garlic  TT EVOO
1/4 cup diced onions    (save some to put on top after baking pita)
1/4 cup sliced scallions
1/4 cup diced tomatoes
TT Tomato paste

TT Sliced lettuce
TT peeled sliced cucumbers
TT grated cheddar cheese

TT   Tzatziki Sauce* 


Brown meat well adding spices, add onions & garlic, add tomato paste till proper consistency is achieved, place meat on pita top with cheese and melt, plate pita, top with lettuce onions, tomato, scallions, finish with Tzatziki sauce and EVOO!


  1. In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.
